Eating the whole animal, from brain to tail, is common practice in many cultures around the world. And I have a particular fascination for the meat on the head of the animal - it's something I've observed at butchers and meat shops around the country and the world. I explore this fascination and my first experience eating the meat of goat's head, locally known as thale mamsa, at Ranganna Military Hotel, a Bangalore eatery that a serves rather carnivorous breakfast by South Indian standards.
